ACTUALLY ONE KIDNEY IS SUFFICIENT TO PERFORM ALL THE FUNCTIONS. Similar to limbs, ears, lungs and the brain, it is probable that kidneys formed as a pair because of the symmetrical evolution of the organs. We might have adapted to develop two kidneys because of the vital purpose provided by the organs, in order if one is destroyed, the body can continue to survive.

The reason we have two Kidneys, and two Lungs etc. may be due to evolution that gave us a symmetry to our bodies. Also the way the organs develop in a baby the womb means some form from a single bud (the liver) others form from two buds (the Kidneys.
