Brain freeze or ice cream headache is really called sphenopalatine ganglioneuralgia ……. Def easier to say brain freeze!!
It’s caused by the rapid cooling then re-warming of the blood vessels in the sinuses- this causes the nerves to send pain signals and gives you that quick freeze- as you warm back up the pain goes away. Eating ice cream slower would prevent this- but it wouldn’t be as fun……..

Brain freeze is the cooling of the facial blood vessels, as @Adelle said. Normally you can get rid of it by pressing your tongue against the roof of your mouth, which causes the blood vessels to dialate.

It is a sudden feeling of pain in the forehead when eating or drinking cold items.

It is caused by the temporary narrowing of the arteries as a result of the rapid cooling of the hard palate.
